ADVANCED Bread or Cake Conditioning

Advanced Freezers from The Netherlands has developed a range of spiral cooler/chillers for the bakery industry. These Advanced Cooling systems offer the most ideal bread or cake cooling concept in regard to hygiene, shelf life and product safety.

By creating the optimum environment within the cooling area (insulated enclosure) where the Advanced spiral cooler is placed in, a constant high quality standard of the products to be cooled is guaranteed.

To generate the perfect environment Advanced is using an air-handling or air-conditioning unit, that whatever the weather or temperature conditions are outside the building or in the production hall, can maintain a constant level of cooling.

Cooling Conditions

The most ideal conditions to get the perfect product after cooling depends on:

1. A constant temperature where the set temperature (between 15 and 25°C) can be held within the range of ± 1°.

2. The moisture content (or relative humidity) of the cooling air is very crucial to avoid any dehydration or excessive moisturizing of the products. The humidity level should be kept within the range of ± 2% to maintain the same cooling quality.

3. A further important quality factor is the air speed that is generated over the product. This should be within the range of approximately 1-2 meters per second, depending on the consistency of the products to be cooled. Advanced Cooling systems are using gentle horizontal laminar airflow throughout the entire cooler for a perfect result.

4. Especially for long shelf life products it is most important to create an over pressure within the cooling area just to avoid any polluted air sneaking into the insulated enclosure through any kind of openings.

5. To be able to save on the energy costs for the process air, fresh filtered outside air can be partly taken into the circuit as well. Filtering the fresh air before entering the cooler is a must and therefore the Advanced Cooling system offers mechanical filters in various executions and filter classifications. Also ultraviolet lights can be used to maintain an air quality free of microorganisms.

The air-conditioning units can be installed within the production area, on top of the insulated  spiral enclosure, but units executed in stainless steel for outside erection are available as well.

Advanced Cooling spirals are designed to the client’s needs, based on the required capacity and retention time, and therefore are available in various belt lengths, single or double drum systems, and of course in any required belt width.

Advanced spiral cooler belts are often executed in stainless steel, with or without any mesh overlay, or in plastic and available in various colors if required.

Next to the supply of the actual spiral cooling equipment, Advanced is specialized in supplying  and installing the required product indeed and out feed systems as well. Therefore oven de-loaders, conveyor and divider (aligning) belts, gravity slides or spiral de-elevators are part of Advanced daily business.
